Easy Pho Recipe for the Girlboss

One of the things I think all career girls find the hardest is juggling all the balls that are in the air! Between meetings, deliverables for work, building your side hustle, trying to have some shred of a social life you likely also have it on your goals to eat healthy and clean, but who has the time???

The struggle is REAL!

I recently got to try a new Toronto subscription service that delivers high quality, organic and LOCAL meats to your doorstep! It is called TRULOCAL.

I LOVE this concept!

Eating high quality and especially local meat is so important! Not only is it much healthier for you to be eating meat that comes from a humane place and not riddled with hormones, it is easier on the environment if it comes from local farmers; this is something that we can all support it.

This is all fine and dandy right; but who has time to go to boutique butchers to drive to a farm . . .


I barely have time enough to go to the grocery store! The concept is such that you can actually build the box that you want to have delivers. All the meat comes on dry ice so definitely no worries of get getting warm. I got my box a while ago and it got me inspired (and quite hungry) so I decided to make a quick, little recipe for busy ladies on the go!!!


Lazy Girl Pho


  • 1 TruLocal filet mignon
  • 1 carrot shredded
  • 3 small stalks baby bok choy
  • Rice noodles
  • Pho stock (get this in the soup aisle)
  • 1/2 C. shredded cabbage
  • Hoisin and Sriracha to taste


Pour pho stock into a pot and bring to a boil. Boil water in a kettle and pour over rice noodles; let sit until al dente. Shred cabbage, carrots and clean bock choy; add to boiling pho stock to cook for 5-10 minutes. Heat an oiled pan on high. Sear filet mignon on both sides and cook to medium rare; let sit for 5 minutes minimum.

Add noodles, vegetables and slices of filet mignon to bowl; pour pho stock over top. Add Sriracha and hoisin sauce to taste. ENJOY!
