The easiest pancakes of your life; only two ingredients!!!



Two Ingredient Pancakes!

I love breakfast! Literally, I could eat breakfast food everyday, all day! It ranges from a simple yogurt with granola or smoothie to avocado toast ๐Ÿ™‚ On the really special days I make pancakes ๐Ÿ˜€ I am getting excited just thinking about it! I know what you’re thinking, I don’t have time to make pancakes in the morning before work (haha, it sounds like an infomercial >.<), but seriously guys, these are not only the fastest and most delish but guess what, only two ingredients!

I posted a photo of these babies on Instagram andย I got a lot of people asking me to give them the deets! So here we go ๐Ÿ™‚


Ingredients (the shortest list I might ever make haha)



2 eggs

1 banana




maple syrup

coconut oil/ butter


So simply, you can smush the banana with a fork and then whisk in then eggs and there yah have it! If you want a perfect, less clumpy, batter, then put the two eggs and banana in a blender and whiz it up ๐Ÿ™‚ Voila!

After your batter is prepped heat the pan, please make sure it isn’t too hot, then you’re going to have some internally raw/ externally burnt pancakes (not to mention, not be very happy with my recipe :S).

Keep the pan on medium, I like to melt a little coconut oil and dip a folded paper towel in it and glide it over the pan for minimal but adequate oil, plus coconut oil makes everything feel tropical ๐Ÿ™‚ Then, pour the batter into the pan. If you want to get super fancy use a metal mould (or cookie cutter) for shapes, a simple circle works best ๐Ÿ™‚ I used a mason jar lid for mine (now I am giving you all these BTS tips!!! ). Okay, ย so how do you know when to flip? When you start to see bubbles, that is when you can gently flip those babies. After they’re all cooked, stack ’em high, add some toppings and a ‘lil maple syrup, let’s keep it to the REAL maple syrup for these ones okay ๐Ÿ™‚ Then you’re done!

Guys is this not the simplest yet gourmet-in-disguise breakfast ever? This also helpsย me to have something special without going overboard and they are obviously SUPER high in protein. These are 250 cals and 14 gr. protein! Course, higher cals if you add that luscious maple syrup, so use it sparingly ๐Ÿ˜‰

      THANK YOU Cathclaire! You must try them ๐Ÿ™‚ They are so light and yummy and keep you full (due to the protein)! Sometimes I like to make little mini ones and carry them around as snacks ๐Ÿ™‚
